TL;DR

Bali Belly (traveler's diarrhea) usually starts within 1–3 days after exposure and often improves within a couple of days with rest and rehydration. Food poisoning can start within hours (especially toxins) and may bring more intense vomiting. Seek medical help if symptoms are severe, last >48 hours, there's blood in stool, high fever, or signs of dehydration.
